The Process
The Old Way.

The Mash
Tennessee corn, malted barley, and mountain water. Cooked low and slow to coax out every bit of character before fermentation.
The Still
Copper pot still. No column, no shortcuts. Copper strips sulfur and smooths the spirit the way it's been done for generations.
The Cut
We cut by taste and smell, not just numbers. The heads go, the tails go — only the heart of the run makes it into the bottle.
